Today’s topic is food trends 2020, but more specifically how you can use those food trends in your kitchen and as a personal chef, how you can apply them to the menus of your clients.

The first one is all over the news, Beyond Meat, a plant-based meat. At first thought, you may think the company is targeting vegetarians or vegans, but they’re actually targeting meat eaters, offering their product as a substitute to eating meat. Likely if you already have vegetarian or vegan clients, they’re not going to be interested in trying Beyond Meat.
To include Beyond Meat in your menu, think past hamburgers. You could offer it as a substitute for anything with ground meat. For example, I may offer lasagna, meatballs or tacos. With each of the dinner descriptions, I would add, “add your choice of meat.” The meat choices could be “ground beef, ground turkey, ground bison, or Beyond Meat.”
This leaves it up to the client to decide if they’d like to try out this new product. Maybe they end up choosing their traditional ground beef lasagna. That’s okay too. You offered a new option, showing you’re up on food trends and open to new menu item suggestions.
Another new food trend is CBD edibles. You might be thinking desserty treats and that’s because CBD oil blends well with other fats and oils. One of the secrets of using CBD oil in cooking is mixing really well.
I personally have tried CBD oil in in brownies. I placed six drops into the oil when creating a batch of a dozen brownies, then stirred really well before adding the remaining ingredients. CBD oil should not be heated above 320 degrees Fahrenheit. I cooked these brownies at 300 for 30 minutes instead of 350 for 20 minutes.
I’ve also made guacamole by mashing CBD oil into the avocado themselves, then adding the remaining ingredients of jalapeno, Roma tomato, garlic, cilantro and lime juice.
Another food trend for 2020 is mocktails. Mocktails are going to be huge! America has been trending toward a healthier lifestyle and alcohol excess is an American lifestyle that declines health over time. Mocktails and alcohol-free bars are the trend.
You could offer mocktails on the bar menu at upcoming events. Floral-infused drinks are hinting at being the most popular. For example, you could offer a butterfly pea mocktail at a gender reveal party, since it changes the color of liquid blue.
How about having a juice pairing lunch or a mocktails and appetizers party?
Living a healthy lifestyle is certainly trending. Each individual has a different idea of what healthy means to them. One health trend includes swapping out cauliflower such as what you’ve probably already seen in the store with cauliflower crusted pizza.
You could offer cauliflower crust pizza in your personal chef menus and my guess is that it’s going to be wildly popular. Cauliflower mashed potatoes and cauliflower soup are both family favorites with my clients.
New Gluten-Free Flours
As a personal chef, about 50% of the families I work with are gluten free, some for celiac reasons and others have made the choice to live a gluten-free lifestyle. A new line of gluten-free flours will become available this year, one of them being cauliflower flour. Start brainstorming now about how you can use these different flours in your recipes.
There are also some inventive new sweeteners coming out. Pomegranate molasses is already available, but have you tried monkfruit syrup? I personally have not yet seen it on the store shelf, but can’t wait to give it a try!
Food Trends 2020: Soy & Dairy Alternatives
Many families are moving away from soy and many new products are available as a substitute for soy, such as the Beyond Meat meat substitute mentioned above.
Many new dairy substitutes are arriving on grocery shelves, often made with nuts and grains such as cashew ricotta, cashew cream cheese, almond milk yogurt and oat milk. Oat milk is all the rage right no, often selling out at the grocery store.
All these dairy substitutes can be made at home or offered on your personal chef menus I found numerous vegan pantry recipes in this cookbook that I highly recommend. The author offers so many vegan pantry items, all made from scratch. #affiliate
Chicken Nuggets + Mac & Cheese
The whole food trend is great for kids because kids like to see everything that they’re eating. They don’t like food touching as in a vegetable medley. They prefer to view vegetables in individual stacks rather than mixed together.
In 2020, thank goodness we’re getting away from chicken nuggets and mac n cheese for kids. Parents are looking for alternatives to traditional kid foods. Salmon shaped like a fish sold in the frozen food aisle are tremendously popular. Of course, you can make them yourself by making salmon patties then shaping them into fish. I’ve listed my favorite salmon patty recipe below:
Salmon Patties Recipe 🍣
In a large mixing bowl, whisk together 1 bunch minced scallion, zest and juice of one lemon, 2 tblsp grainy mustard and 1 tsp Old Bay. Small dice 1.5 lb salmon (have the fish monger remove the skin for you or do it yourself) then gently stir into the scallion mix along with 1 tblsp capers. Stir in 1 cup panko. Shape mixture into patties or fish shapes, then refrigerate for a half hour. Bake at 350 for 10min/side or skillet cook in a touch of oil until just opaque, a few minutes per side.
Fad Diet Trend 2020
As far as diets for food trends 2020, I’d say the keto diet is definitely going to stick around. The keto diet is not necessarily meant for long term, but instead for short-term weight loss, though many live a daily lifestyle of keto.
As a personal chef, if a client asks for the keto diet, I provide them with just that and without judgment. It’s up to you, however, how you want to run your business. If someone asks for the keto diet, you can either choose to satisfy their wishes or refer them to another personal chef who may offer keto as a specialty.
Blockchain’s Role in Food Recall
In the future, we should see less food recall since blockchain is getting better at tracking food from farm to consumer. Blockchain is making it more efficient to research the source of food contamination.
